Raid the pantry and fridge to whip up a batch of scrummy peanut butter cookies. They’re great for an anytime snack and, because you don’t even need to break out the electric beaters to mix the dough, even younger kids will enjoy helping you make them.
How to make peanut butter cookies: key tips
Add and mix your ingredients as per the recipe, mixing until the flour is well incorporated, but try not to overmix.
Place teaspoonfuls of the mixture on greased baking trays (you can line them with baking paper, too, if you wish), and remember to leave room for spreading. If the mixture is too soft, feel free to pop it into the fridge for 5 minutes to firm up.
Don’t be hasty and try to lift your cookies from the baking trays straight after baking as they’ll be really soft. Leave them to cool on the tray and they will harden up. If you would like crunchier cookies, you can bake them for a few minutes longer.
Key ingredients in this peanut butter cookies recipe
Go for regular peanut butter for this recipe, as it has added oil and salt. Use smooth if you just want the flavour, or try crunchy peanut butter for extra munchy bits in your cookies.
Brown sugar gives these cookies a slight caramely flavour, and makes them a little more chewy than white sugar would.
