Inspired by the Cherry Ripe chocolate bar, these boozy, easy no-bake balls are covered in dark chocolate for added decadence.
Ingredients
- 4 cups desiccated coconut
- 400g glace cherries
- 2 tbs cherry brandy essence
- 3 drops red liquid food colouring
- 400g sweetened condensed milk
- 375g dark chocolate
- 30g copha
Method

Step 1Combine coconut, cherries, essence, food colouring and condensed milk in a bowl. Mix well.

Step 2Roll heaped teaspoons into balls and refrigerate until firm.

Step 3Melt chocolate and copha together.

Step 4Re-roll balls before dipping into chocolate.

Step 5Dip in chocolate mix. Set aside to set. You can dip balls again for an extra thick chocolate layer.

Hands are best for mixing this together.
