Pikelets are the perfect bite-sized treat, and with only 4 ingredients, our baby pancakes can be whipped up in a matter of minutes. With no need to rest the batter, this easy pikelet recipe is not only ideal for weekend brunches or after school snacks, but it’s so simple I sometimes whip them up for a filling breakfast on a busy school morning. 

Pikelets aren’t just for sweet toppings, they can be made savoury like this classic recipe topped with  salmon and dill. Canned corn and vegetable pikelets make a fun and healthy side or snack for kids or how about changing things up for breakfast with our polenta version served topped with bacon. 

How to make traditional pikelets: key tips

Make sure your milk and egg are still chilled from the fridge as this will make the batter cold so there’s no need to rest it. Whisk the ingredients until just smooth but don’t overmix as this will make your pikelets tough. Brush the pan well with butter and cook over medium heat. Your pikelets are ready to turn when little bubbles appear on the surface. 

Key ingredients in our simple pikelet recipe

Using self raising flour is key to making fluffy pikelets. It contains baking powder which reacts with the milk to create bubbles. The caster sugar just adds enough sweetness, but not so much that you can’t serve them with sweet condiments like jam, honey or maple syrup.

Ingredients

  • 1 cup self-raising flour
  • 2 tbs Woolworths Essentials Caster Sugar
  • 1 egg lightly beaten
  • 3/4 cup milk

Method

  • Step 1
    Combine flour and sugar in a medium bowl. Gradually whisk in egg and milk to make a thick, smooth batter.

    Drop dessertspoonfuls of mixture into a greased heavy-based pan. Cook until bubbles begin to appear on the surface of the pikelet. Turn and brown the other side.

My pikelets are tough and a bit rubbery, where have I gone wrong?

Chances are you’ve overmixed your batter. Next time, try just whisking the ingredients together until just smooth and see how you go. 

How big are pikelets supposed to be?

Pikelets are essentially small pancakes, so usually they are around 7-10cm in diameter. But, remember, you are in control here, so you can make them as big or small as you like!
