Midweek meals don’t get much tastier or easier than this. Creamy and a little salty, with a lovely kick of garlic, budget-friendly chicken gets an Italian makeover in this delicious family pasta dish.
How to make an easy chicken and fettuccine carbonara: key tips
Season the chicken with salt and pepper and cook it in a little olive oil in a frying pan until lightly golden and cooked all the way through. Try not to overcook the chicken or it will become dry and tough but, for safety, it does need to be fully cooked.
In step 3, when you add the garlic, make sure that you let it cook, while stirring, for at least 30 seconds before adding the cream and cheese. This will mellow its raw, pungent flavour so that it develops a richer, sweeter taste. It also gives the garlic a chance to infuse with the oils in the pan.
Give the egg yolks a light whisk in a small jug before you add them to the pan in step 5. As soon as you pour the yolks into the pan, keep stirring for a couple of minutes until they are well incorporated, so that the egg doesn’t settle and cook on the base of the pan.
Once you stir through the cooked pasta in the final step (you could also stir through up to 1/3 cup of the pasta water to thicken the sauce), serve your meal immediately. The pasta will continue to absorb the sauce as it sits and will become drier and less enjoyable.

Chicken breast fillets are a budget-friendly option and are low in fat, however feel free to use thigh fillets, if you wish. If you like, you can keep the fillets whole – just remember to completely cook the chicken in the pan in step 1 before moving onto the next step.
Chopped bacon rashers add a wonderful salty element to this pasta dish. If you prefer less fat, then use chopped short cut bacon.
This recipe calls for 4 egg yolks, which will make the sauce rich and creamy. If you wanted to save on eggs (or if you’re running low), you could use 2 whole eggs instead and forsake a little of the richness. The cream should make the sauce more than rich enough.
Fettuccine offers wide ribbons of pasta for the sauce to cling to, but spaghetti or tagliatelle can be used in a pinch.
