I love asparagus - one of the first signs of spring - because (as well as being delicious) it’s so easy to prepare. And I love combining it with two of my other favourite foods, rice and goat's cheese, in this simple risotto.
Packed with vegies, this tasty frittata can be cut into bite-sized portions and served as an appetiser, or cut into generous wedges and served with a lovely fresh salad as a nourishing main meal. It also makes a hearty sandwich filling.
Whip up plenty of these tasty fritters as leftovers are perfect for the breakfast or lunch the next day. They are also great for packing into lunch boxes and picnic hampers.
