Scrub your spuds under running water to remove any dirt – no-one wants their potatoes to be that crunchy!
You’ll need to pierce your potatoes with a small sharp knife to allow steam to be released while they are cooking in the microwave and so they won’t explode (if they do, make mash!).
Try not to go overboard with the oil when drizzling your potatoes for baking, as they’ll turn out soggy. Just a little drizzle is enough then, along with the salt, your potatoes will have everything they need to become golden and crispy.

I find that sebago potatoes are the best roasting potatoes. They also boil, grill and mash well, so are a good all-rounder to have in the pantry. You could use other roasting potatoes, if you like – simply check the packets or signs at the supermarket to see if the potato type you’re looking at is good for roasting.
Olive oil and salt are used on these roast spuds to enhance their flavour. They will also help to achieve a crispy texture by promoting browning and caramelisation.
Finely chopped herbs sprinkled on the hot potatoes are aromatic and will add loads to the flavour. I personally love using finely chopped chives or thyme.
