There’s no need to crush the biscuits for this slice, you simply line the base of your slice pan with them, cutting them to fit, if necessary. Then just combine the remaining 3 ingredients and pour the mixture on top of your biscuit layer, before finishing with another biscuit layer.
You’ll need to place the slice in the fridge for a few hours so that the filling firms up as the coconut absorbs the sweetened condensed milk and lemon juice. During this time, the biscuits will also soften a little.
Key ingredients in this no-bake condensed milk recipe
Milk coffee biscuits are used in this recipe, but feel free to use another plain sweet biscuit, such as Nice. The biscuit you choose will need to be rectangular in shape so that it will cover the base and top of the slice without leaving gaps.
The sweetened condensed milk, coconut and lemon juice combine to make a sweet and creamy, yet tangy, filling that has a lovely texture, thanks to the coconut. Opt for fresh lemon juice, rather than concentrated, so that you achieve the best possible flavour.
