This bake is very close to my heart. My parents (like all parents) were fighting a losing battle to get us kids to eat fruit and veg. I really dug my heels in when it came to greens, but I never had any objections to banana, not because I liked bananas in particular, but because it always came cut up in little pieces with a sprinkle of brown sugar on top. Admittedly, not the healthiest of things to do to a fruit, but it got us to eat it! Maybe mum should have tried that trick on my peas as well. So these are a little, okay, a lot further towards unhealthy than a fresh banana with a little sugar on top, but my god are they yummy! They’re soo good in fact that I've had to implement a new rule. No baking when hungry!! I ate way too much batter, and then way too many dumplings. I don't think I'll be needing dinner tonight!
