My son had been asking for a rainbow cake for at least two years so a month ago I finally made him one for his 7th birthday and he was the happiest boy ever! To me, no matter how much time is spent making a cake, the appreciation and excitement that a child feels repays the effort a thousand times over!
Ingredients
- 330 g raw sugar
- 250 g butter softened
- 4 eggs
- 15 g vanilla essence
- 480 g self-raising flour
- 260 ml Pauls lactose-free Zymil full cream milk
- 6 bottles liquid food colouring
Icing
- 340 g cream cheese softened
- 1 1/2 cups butter softened
- 6 cups icing sugar
- 1 tbs vanilla essence
- 2 tbs hundreds and thousands
Method

Step 1Preheat oven to 180 C.

Step 2Generously grease and flour 6 x 9-inch cake pans.

Step 3Mix eggs, vanilla extract and milk in a large mixing bowl until combined.

Step 4Mix in the flour, gradually, until combined.

Step 5Divide the batter into six bowls (about 1 cup of batter per bowl). Add food coloring to each bowl to create a vibrant red, orange, yellow, green, blue, and chocolate.

Step 6Pour each coloured batter into the prepared pans and spread out into an even layer (layers will be thin). Bake for 10-15 minutes.

Step 7Remove and allow to cool on cake racks.

Step 8Meanwhile, make the cream cheese icing by creaming together cream cheese and butter. Mix in icing sugar and vanilla.

Step 9Place the chocolate layer down first and a layer of icing. Repeat with the blue layer, green layer, yellow layer, orange layer and finally the red layer.

Step 10Place a thin coat of the icing on the cake to create a crumb coat. This will make the cake even all around and seal any loose crumbs. Serve!
Recipe Notes
I used green, orange, red, blue, yellow and brown (cocoa) food colouring.
