Ingredients
- 1 kg chicken breast fillet cut into strips small
- 2 tbs extra virgin olive oil
- 1 1/2 tsp garlic minced
- 2 tbs light soy sauce
- 1 tbs fish sauce
- 2 tbs Asian chilli sauce
- 1/2 tsp Chinese five-spice powder
- 2 tbs extra virgin olive oil
- 2 cup broccoli broken into florets
- 1 cup baby beans
- 1 red capsicum roughly chopped
- 450 g Hokkien noodle
- 1 tsp onion powder
- 3 tbs light soy sauce *to taste
Method

Step 1Heat oil and garlic in a wok or fry pan.

Step 2Add chicken and fry until cooked.

Step 3Drain chicken on paper towel, reserve ½ cup of pan juices.

Step 4Mix in a bowl light soy, fish and spicy red sauces, Chinese five spice and the reserved pan juices.

Step 5Add chicken in batches, coating in sauce until all chicken is in bowl. Refrigerate.

Step 6Add extra oil to pan, heat. Then add vegetables and onion powder, stir fry for 3 minutes.

Step 7Add chicken and sauce mixture to pan and stir through vegetables. Add extra soy sauce to taste.

Step 8Stir fry for approximately 2 minutes.

Step 9In a bowl, place hokkien noodles, pour boiling water over to cover the noodles and leave for two minutes. Separate with a fork and drain.

Step 10Gently mix noodles through stir fry. Serve.

What can I serve with chicken stir-fry?
This easy stir-fry includes noodles, which makes it an all-in-one meal, but if you're serving a crowd, it's also great for making the main dish of a banquet, as it's so easy to prepare. Ideas to serve it with include spring rolls, dumplings, stir-fried greens and steamed rice.
I tend to find timings for stir-fries tricky. Are there any tips for making the process easier for a perfect result?
Because stir-fries don't need much cooking time, it's best to have all your ingredients prepared before you get started - you won't have any time for chopping while other things are cooking! Also, read through the method before you start and have any equipment you need ready on the bench, including a colander, bowls, utensils and plate lined with paper towel for draining - otherwise your stir-fry could overcook while you're hunting for equipment.
