Ingredients

  • 250 g Arnott's Scotch Finger biscuits crushed
  • 100 g mini marshmallows
  • 125 g butter melted
  • 200 ml sweetened condensed milk
  • 1 cup desiccated coconut

Method

  • Step 1
    Place biscuit crumbs, marshmallows, condensed milk and butter in a large bowl and stir with a wooden spoon until combined.
  • Step 2
    Form biscuit mixture into a log about 5 cm thick. Spread coconut over a large piece of baking paper.
  • Step 3
    Roll log in coconut, twist baking paper at ends to secure then refrigerate for 2 hours or until firm.
  • Step 4
    Cut into approximately 24 slices.
Recipe Notes

If you can't find mini marshmallows you can cut up larger ones.

I also make this in a square baking dish lined with paper.
