Freaky Halloween biscuit fingers that not only look gory, but taste delicious, similar to shortbread.
Ingredients
- 250 g unsalted butter softened
- 1 cup icing sugar
- 1 egg
- 1 tsp vanilla extract
- 2.7 cup plain flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup strawberry jam
- 125 g blanched almonds
Method

Step 1Preheat oven to 165C. Beat butter and icing sugar until light and fluffy.

Step 2Add egg and vanilla and mix well to combine.

Step 3Beat in flour, baking powder and salt until a soft dough is formed.

Step 4Wrap in cling wrap and refrigerate for 40 minutes.

Step 5Take out a 1/4 of the dough and roll a small amount into a sausage. Shape the finger slightly to form knuckles.

Step 6Place on lined baking tray a couple centimetres apart. Press an almond at the end of the finger for nails and gently score lines around knuckles.

Step 7Bake in oven for 10-12 minutes until lightly browned.

Step 8Once cool enough, remove the almond and smear some jam around the end of the finger then place the almond back.

Step 9Repeat with the remaining dough.

Recipe Notes
To speed up the resting process I place the dough in the freezer. The shaping of the fingers can be a little time consuming. I get the kids to help out with the almonds and scoring of the lines and their favourite, smearing of the 'blood'.
You can use raspberry jam instead of strawberry if preferred.
