Delicious fried rice that is a favourite of mine and many of my friends.
Ingredients
- 2 cup rice
- 2 chicken stock cube
- 1 pinch salt and pepper
- 5 bacon rashers diced
- 1 chicken breast fillet diced
- 2 cup frozen peas and corn
- 1 onion sliced
- 3 tbs butter
- 3 egg
- 1 tbs milk
- 1 tsp soy sauce
- 1 cup water
Method

Step 1Place rice, butter and onion in large fry pan.

Step 2Stir until the butter is absorbed and onion cooked.

Step 3Add a splash of soy sauce and enough water to cover rice.

Step 4Add 2 chicken stock cubes, salt and pepper. Allow to simmer until rice is cooked.

Step 5While rice is simmering, fry bacon and chicken together until cooked.

Step 6Mix eggs with a little milk, fry like an omelette and cut into 2 cm strips.

Step 7Mix vegetables, bacon and chicken through the rice once all water is absorbed.

Step 8Add another splash of soy sauce and fry for a further 10 minutes.
Recipe Notes
If vegetarian leave out bacon, chicken and egg. It is still wonderful without these ingredients. Vegetables can be varied for personal taste. I was taught this easy recipe when I was 16, from an old Chinese cook. If not serving straight away, place in baking dish and cover with foil and leave in a warm oven. I used 2 cups mixed corn peas and carrot.
