You won't need to go to the restaurant for this dish, it's too easy to make at home.
Ingredients
- 1 barbecued cooked chicken broken into pieces shredded
- 3L chicken stock (liquid)
- 840 g cream-style canned corn
- 1 tsp sesame oil
- 2 slices ham (deli) diced
- 5 shallots chopped
- 2 egg
- 1/2 tsp ginger
- 4 tbs cornflour
- 4 tbs water
- 1 tbs shallots *to decorate
Method

Step 1In a large saucepan, combine chicken stock, creamed corn, ginger, shallots, salt, pepper and sesame oil and bring to a boil.

Step 2Make a paste of equal parts of cornflour, approximately 4 tablespoons, and water. Add to soup, stirring until soup thickens.

Step 3Reduce heat simmer for 1 minute.

Step 4Beat eggs with a small amount of water, add in a thin stream stirring well.

Step 5Add shredded chicken and chopped ham.

Step 6Heat gently and top with extra shallots.
Recipe Notes
Serve with nice crusty bread. Adjust seasoning to your taste and add more ginger if desired.
