You won't need to go to the restaurant for this dish, it's too easy to make at home.

Ingredients

  • 1 barbecued cooked chicken broken into pieces shredded
  • 3L chicken stock (liquid)
  • 840 g cream-style canned corn
  • 1 tsp sesame oil
  • 2 slices ham (deli) diced
  • 5 shallots chopped
  • 2 egg
  • 1/2 tsp ginger
  • 4 tbs cornflour
  • 4 tbs water
  • 1 tbs shallots *to decorate

Method

  • Step 1
    In a large saucepan, combine chicken stock, creamed corn, ginger, shallots, salt, pepper and sesame oil and bring to a boil.
  • Step 2
    Make a paste of equal parts of cornflour, approximately 4 tablespoons, and water. Add to soup, stirring until soup thickens.
  • Step 3
    Reduce heat simmer for 1 minute.
  • Step 4
    Beat eggs with a small amount of water, add in a thin stream stirring well.
  • Step 5
    Add shredded chicken and chopped ham.
  • Step 6
    Heat gently and top with extra shallots.
Recipe Notes

Serve with nice crusty bread. Adjust seasoning to your taste and add more ginger if desired.
