Ingredients

  • 1/2 cup frozen corn and peas
  • Lurpak* Softest Butter
  • 50g cream cheese, softened
  • 1/2 cup (60g) grated tasty cheese
  • 8 slices sandwich sliced wholemeal bread

Method

  • Step 1
    Cover peas and corn with boiling water in a bowl, tip into a sieve and drain well. Return to the bowl with 1 tablespoon of butter, cream cheese and grated tasty cheese and mix well to combine.
  • Step 2
    Butter 8 slices of bread. Place 4 slices of bread, buttered side down, in a cold frying pan. Divide the filling between the pieces of bread and spread to the edges. Place a second slice of bread, buttered side up, on top and place pan over a medium high heat. Cook for 2-3 minutes or until the bread is golden. Flip and cook for 2 minutes or until the bread is golden and the filling is lovely and melty.
  • Step 3
    Remove from the pan and cool for 5 minutes before cutting into 3 fingers, then turn 90 degrees and cut into 3 again, to serve.
