Clumpy Chocolate Granola

Ingredients

  • 3 tbs coconut oil melted
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 2 1/2 cups oats
  • 1/4 cup wholemeal flour
  • 1 tbs cacao powder
  • 1/2 tsp cinnamon
  • 1 handful mixed nuts raw
  • 1 handful mixed dried fruit

Method

  • Step 1
    Preheat the oven to 180-160C fan-forced and line an oven tray with baking paper.
  • Step 2
    Mix the coconut oil, honey and vanilla extract together in a bowl.
  • Step 3
    In a separate bowl, combine the oats, flour, cacao and cinnamon.
  • Step 4
    Add the oat mixture to the coconut oil mixture, half a cup at a time. Ensure the mixture is properly mixed before adding the next cup.
  • Step 5
    Once combined, add in the nuts/seeds and dried fruit and mix well.
  • Step 6
    Place mixture onto the oven tray and cook in the oven for 20-25 minutes.
  • Step 7
    Allow to cool completely before placing in an airtight container.
Recipe Notes

The honey can be reduced or increased as per your personal preference.

When stored in an airtight container, it will last up to 2 months.

This is an incredibly versatile recipe. You can add any combination of nuts, seeds and dried fruits, according to your preferences. My favourite combination is almonds, hazelnuts and sultanas.

To achieve the all-important clumps, it’s important to ensure that the oats are slightly crowded in the tray, so they can stick together. Once cooked, leave the tray out for a few hours to allow the oats to further clump as they cool down.
