If you love freshly-baked cookies, but lose interest when you have to roll out individual cookies onto a tray, these cookie brownies are your new best friend!
Ingredients
- 225 g butter
- 1 cup brown sugar
- 1/2 cup caster sugar
- 2 tsp vanilla extract
- 2 eggs
- 2 cups plain flour
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 1 1/2 cups walnuts coarsely chopped
- 1 1/2 cups dark chocolate
Method

Step 1Preheat the oven to 180˚C.

Step 2Cream the butter and sugars together until light and fluffy. Add the vanilla and then the eggs one at a time, beating well between each addition.

Step 3In a second bowl, sift together the flour, bicarb soda and salt. Add the flour mixture to the butter mixture slowly, while beating the mixture on low.

Step 4Fold in the walnuts and chocolate chunks.

Step 5Spread the batter/dough into a large 20cm x 30cm baking pan. The mixture will rise, so don't worry if it looks a little thin once spread into the tin.

Step 6Bake for 30 minutes. Cool completely and then cut into squares.
Recipe Notes
You can use chocolate chips in this recipe if you can't be bothered cutting a block of chocolate into chunks.
Make sure you don't overcook these, they are best when they are a little bit gooey in the centre, like a brownie.
You can serve these warm, as a yummy rustic dessert with a scoop of vanilla ice cream on top.
