Ingredients

  • 1 L chicken stock (liquid)
  • 1 tsp ginger finely grated
  • 125 g vermicelli
  • 1/2 red capsicum thinly sliced
  • 1/2 bunch bok choy thinly sliced
  • 1 tsp soy sauce

Chicken balls

  • 200 g chicken mince
  • 1 tbs coriander chopped
  • 1/2 tsp soy sauce
  • 1 garlic clove crushed

Method

  • Step 1
    Bring the stock and ginger to the boil in a large saucepan.
  • Step 2
    Combine ingredients for chicken balls and shape into roughly 12 balls.

    Drop into soup, then add the noodles.
  • Step 4
    Stir gently and simmer for 4-5 minutes or until balls are cooked.
  • Step 5
    Add capsicum and simmer for a further 1-2 minutes.
  • Step 6
    Add bok choy and stir slowly until wilted.
  • Step 7
    Season to taste with soy sauce and serve immediately.

  • 1 saucepan
Recipe Notes

Use vermicelli or egg noodles.
