Comfort food for winter.
Ingredients
- 1 L chicken stock (liquid)
- 1 tsp ginger finely grated
- 125 g vermicelli
- 1/2 red capsicum thinly sliced
- 1/2 bunch bok choy thinly sliced
- 1 tsp soy sauce
Chicken balls
- 200 g chicken mince
- 1 tbs coriander chopped
- 1/2 tsp soy sauce
- 1 garlic clove crushed
Method

Step 1Bring the stock and ginger to the boil in a large saucepan.

Step 2Combine ingredients for chicken balls and shape into roughly 12 balls.

Step 3Drop into soup, then add the noodles.

Step 4Stir gently and simmer for 4-5 minutes or until balls are cooked.

Step 5Add capsicum and simmer for a further 1-2 minutes.

Step 6Add bok choy and stir slowly until wilted.

Step 7Season to taste with soy sauce and serve immediately.
