Ingredients

  • 1 cup plain flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 3/4 cup brown sugar
  • 1 carrot grated
  • 1/2 cup (crushed) canned pineapple drained
  • 2 egg
  • 2 tbs oil
  • 1 tsp ground cinnamon
  • 1/2 tsp mixed spice

Method

  • Step 1
    Sift flour, baking powder and bicarbonate of soda. Add sugar and mix.
  • Step 2
    Add carrot, pineapple, eggs, oil, cinnamon and mixed spice.

  • Step 3
    Spoon mixture into greased muffin tray and bake at 180 for 15-20 minutes.
  • Step 4
    Stand for 5 minutes then cool on wire rack.
