A light and moist muffin.
Ingredients
- 1 cup plain flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 3/4 cup brown sugar
- 1 carrot grated
- 1/2 cup (crushed) canned pineapple drained
- 2 egg
- 2 tbs oil
- 1 tsp ground cinnamon
- 1/2 tsp mixed spice
Method

Step 1Sift flour, baking powder and bicarbonate of soda. Add sugar and mix.

Step 2Add carrot, pineapple, eggs, oil, cinnamon and mixed spice.

Step 3Spoon mixture into greased muffin tray and bake at 180 for 15-20 minutes.

Step 4Stand for 5 minutes then cool on wire rack.
