This spiced apricot sauce will soon be your new favourite pantry staple. It's well balanced, not overly spicy but adds delicious flavour to any meal.
Ingredients
- 4 kg apricots, halved
- 2 kg sugar, white
- 2.4 litres vinegar, white
- 700g onions, chopped roughly
- 6 tbs garlic, minced
- 2 tbs salt
- 1 tbs ground pepper
- 1 tsp ground nutmeg
- 3 tsp ground ginger
- 1 tsp ground cloves
- 2 tsp ground cayenne pepper
Method

Step 1Place all ingredients into a large saucepan.

Step 2Turn on heat to bring all ingredients up to boiling.

Step 3When on a full rolling boil, lower heat slightly and simmer for 1 hour, stirring regularly.

Step 4Use gloves when handling jars, sterilize bottles in oven preheated to 150 degrees for 15 minutes.

Step 5Once cooked for an hour, use a mouli or hand blender to puree all the ingredients together, while sauce is hot.

Step 6Carefully pour pureed sauce into sterilised bottles while both the sauce and bottles are hot.

Step 7Add lids immediately. Set aside until room temperature then store in the fridge.

Makes approximately 5 1/2 x 1L bottles, enough to share.
