Ingredients

  • 1 cup plain flour
  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 125 g butter
  • 1/3 cup golden syrup
  • 1/2 cup brown sugar
  • 1/2 tsp bicarbonate of soda

Method

  • Step 1
    Preheat oven to 170C (150C fan-forced). Line a slice pan with baking paper with sides extending over long sides.
  • Step 2
    Combine flour, oats and coconut in a large bowl, making a well in the centre.
  • Step 3
    Combine butter, golden syrup and brown sugar in a small saucepan. Stir over a medium heat until butter melts and mixture is smooth.
  • Step 4
    Add the bicarbonate of soda and stir to combine.
  • Step 5
    Pour wet mixture over dry ingredients and stir until evenly combined.
  • Step 6
    Spread into prepared pan and smooth with the back of a spoon.
  • Step 7
    Bake for 20 minutes. Cool in the pan.
  • Step 8
    Lift out using the paper and cut into 20 bars. Keep in an airtight container.
