Baked vegetables in a cheese sauce, which are nice as a side dish.
Ingredients
- 2 potatoes cubed peeled
- 1 sweet potato cubed medium peeled
- 1 zucchini halved medium sliced
- 6 broccoli florets
- 6 cauliflower florets
- 1 cup dried breadcrumbs
Cheese sauce
- 50 g butter
- 1 leek finely chopped
- 1 green capsicum diced small
- 2 tbs plain flour
- 2 cups milk
- 1 cup tasty cheese
- 2 tsp vegetable stock powder
- 1 pinch salt and pepper *to taste
Method

Step 1Boil potato and sweet potatoes for about 10 minutes, until just tender and place in casserole dish. Add remaining vegetables.

Step 2Cheese sauce: Melt butter and sauté leek and capsicum for 5 minutes.

Step 3Stir in flour and heat for one minute. Remove from heat and gradually stir in milk. Return to heat and allow mixture to boil and thicken.

Step 4Remove from heat and stir in cheese, stock powder, salt and pepper.

Step 5Pour over the vegetables and sprinkle with breadcrumbs.

Step 6Bake at 180C for approximately 40 minutes or until browned on top.

- 1 casserole dish
Recipe Notes
Substitute any preferred vegetables. Halved lengthways and sliced into 2cm pieces for zucchini.
