Vegemite Crackling Roast Pork

Ingredients

  • 500 g pork belly
  • 1 tbs Bega Vegemite *to taste
  • 3 tbs olive oil
  • 3 garlic cloves diced
  • 1/3 cup water
  • 1 pinch allspice optional

Method

  • Step 1
    Preheat oven to 220C.
  • Step 2
    Wash pork and dry well with paper towel. Use a sharp knife to score the skin of the pork at 1cm intervals.
  • Step 3
    If using pork belly, cut part way through down the length of the meat side and rub with allspice.
  • Step 4
    Rub skin evenly with Vegemite. Place pork on a roasting tray. Poor oil around roasting tray, then add garlic and water.

    Roast for 20-30 minutes per 500g. The first 20-30 minutes at 220C then 180C for remaining time, or until rind crackles.
Recipe Notes

My first try at this recipe was a success. Basically cook your pork the way you like, but replace the oil and salt rub with Vegemite.

Use any kind of pork for roasting.
