Ingredients

  • 1 kg grapefruit
  • 1 kg navel orange
  • 2 lemon
  • 4 L water
  • 5 kg white sugar

Method

  • Step 1
    Slice the fruit thinly, discard pips.
  • Step 2
    Place the fruit into a preserving pan.
  • Step 3
    Cover with the water and leave overnight.
  • Step 4
    Bring the fruit to the boil and simmer, uncovered, for 1½ hours.
  • Step 5
    Warm the sugar in the oven.
  • Step 6
    Remove fruit from heat, add sugar.
  • Step 7
    Stir to dissolve the sugar, then return pan to the heat.
  • Step 8
    Boil hard until it reaches 107C.
  • Step 9
    Place mixture into hot, sterilised jars and seal.
Recipe Notes
I use a sugar thermometer to test the temperature. The sealed jars should keep for years.
