There's nothing like home made marmalade.
Ingredients
- 1 kg grapefruit
- 1 kg navel orange
- 2 lemon
- 4 L water
- 5 kg white sugar
Method

Step 1Slice the fruit thinly, discard pips.

Step 2Place the fruit into a preserving pan.

Step 3Cover with the water and leave overnight.

Step 4Bring the fruit to the boil and simmer, uncovered, for 1½ hours.

Step 5Warm the sugar in the oven.

Step 6Remove fruit from heat, add sugar.

Step 7Stir to dissolve the sugar, then return pan to the heat.

Step 8Boil hard until it reaches 107C.

Step 9Place mixture into hot, sterilised jars and seal.
Recipe Notes
I use a sugar thermometer to test the temperature. The sealed jars should keep for years.
