Ingredients

  • 2 mango small
  • 1 Lebanese cucumber
  • 2 tbs fresh mint chopped
  • 2 tbs fresh coriander
  • 80 ml lime juice
  • 1 tsp fresh ginger
  • 2 tbs fish sauce
  • 2 tbs sweet chilli sauce
  • 1 tbs brown sugar
  • 4 fish fillets
  • 1 tbs peanut oil
  • 2 tbs peanuts roughly chopped
  • 1 lettuce

Method

  • Step 1
    Peel and slice mango into strips.
  • Step 2
    Run potato peeler down cucumber to form long strips.
  • Step 3
    Place mango and cucumber in a bowl with mint and coriander and combine. Cover and place in refrigerator.
  • Step 4
    Mix lime juice, ginger, fish sauce, chilli sauce and sugar in a jug and whisk.
  • Step 5
    Preheat grill or frypan, brush fish (eg cod) with peanut oil and cook over high heat for 3-4 minutes.
  • Step 6
    Place lettuce then mango salad mix on plate. Top with fish, drizzle with dressing and serve topped with peanuts.
