Ingredients

  • 500 g chicken breast fillet cut into strips thin
  • 1 tbs oil
  • 3 cups lettuce
  • 1/2 Spanish onion thinly sliced
  • 1/2 red capsicum cut into strips thin
  • 6 mint leaves torn
  • 1/2 cup coriander leaves only
  • 1/2 cup cashews toasted

Dressing

  • 1 tbs fish sauce
  • 2 tbs lime juice
  • 1 tsp caster sugar
  • 2 red chillies finely chopped small *to taste

Method

  • Step 1
    Dressing: Combine all ingredients and shake well.
  • Step 2
    Heat oil in wok or pan.
  • Step 3
    Stir fry chicken in batches for 3-4 minutes or until cooked through. Remove from pan.
  • Step 4
    Combine chicken with dressing while still warm and toss with lettuce, onion, capsicum, mint, coriander and cashew nuts.
  • Step 5
    Serve immediately.
