A very easy and delicious salad for the warm summer months.
Ingredients
- 500 g chicken breast fillet cut into strips thin
- 1 tbs oil
- 3 cups lettuce
- 1/2 Spanish onion thinly sliced
- 1/2 red capsicum cut into strips thin
- 6 mint leaves torn
- 1/2 cup coriander leaves only
- 1/2 cup cashews toasted
Dressing
- 1 tbs fish sauce
- 2 tbs lime juice
- 1 tsp caster sugar
- 2 red chillies finely chopped small *to taste
Method

Step 1Dressing: Combine all ingredients and shake well.

Step 2Heat oil in wok or pan.

Step 3Stir fry chicken in batches for 3-4 minutes or until cooked through. Remove from pan.

Step 4Combine chicken with dressing while still warm and toss with lettuce, onion, capsicum, mint, coriander and cashew nuts.

Step 5Serve immediately.
