An easy Thai stir fry recipe that's great with rice!

Ingredients

  • 450 g chicken mince
  • 1 tbs oil
  • 3 cloves garlic finely chopped
  • 3 chilli sliced small
  • 4 1/2 cups chicken stock (liquid)
  • 2 tsp fish sauce
  • 2 tsp sugar
  • 4 tsp ground black pepper fresh
  • 1 1/2 cup fresh basil dried washed
  • 1 cup snake beans cut into pieces
  • 2 tbs lime juice fresh *to taste
  • 2 tsp soy sauce

Method

  • Step 1
    Heat a wok or heavy skillet over high heat until hot.
  • Step 2
    Add oil and heat until hot but not smoking. Add garlic and stir-fry until golden.
  • Step 3
    Add minced chicken and cook, stirring constantly to prevent sticking, until all chicken is opaque white, 3 to 4 minutes.
  • Step 4
    Add chillies, stock, fish sauce, sugar, soy sauce and black pepper and stir-fry until combined.
  • Step 5
    Add basil and beans and stir-fry for 30 seconds or until basil is wilted but still green. Stir in lime juice.
  • Step 6
    Serve chicken with white rice and a sunny-side up fried egg.
Recipe Notes

I like to use more chillies as I like the spice. You can add as much chilli as you like.

I use chicken stock cubes melted in hot water to add flavour to the minced chicken.
