An easy Thai stir fry recipe that's great with rice!
Ingredients
- 450 g chicken mince
- 1 tbs oil
- 3 cloves garlic finely chopped
- 3 chilli sliced small
- 4 1/2 cups chicken stock (liquid)
- 2 tsp fish sauce
- 2 tsp sugar
- 4 tsp ground black pepper fresh
- 1 1/2 cup fresh basil dried washed
- 1 cup snake beans cut into pieces
- 2 tbs lime juice fresh *to taste
- 2 tsp soy sauce
Method

Step 1Heat a wok or heavy skillet over high heat until hot.

Step 2Add oil and heat until hot but not smoking. Add garlic and stir-fry until golden.

Step 3Add minced chicken and cook, stirring constantly to prevent sticking, until all chicken is opaque white, 3 to 4 minutes.

Step 4Add chillies, stock, fish sauce, sugar, soy sauce and black pepper and stir-fry until combined.

Step 5Add basil and beans and stir-fry for 30 seconds or until basil is wilted but still green. Stir in lime juice.

Step 6Serve chicken with white rice and a sunny-side up fried egg.
Recipe Notes
I like to use more chillies as I like the spice. You can add as much chilli as you like.
I use chicken stock cubes melted in hot water to add flavour to the minced chicken.
