Ingredients

  • 500g biscuits
  • 185g butter melted
  • 170g lemon jelly
  • 2 tsp lemon essence
  • 1 tsp vanilla essence
  • 375ml evaporated milk chilled
  • 250g cream cheese
  • 4 passionfruit
  • 3/4 cup caster sugar
  • 3/4 cup boiling water

Method

  • Step 1
    Process biscuits to fine crumbs.
  • Step 2
    Mix together biscuit crumbs and melted butter or margarine and press into a lined spring form cake tin.
  • Step 3
    Place into fridge to set.
  • Step 4
    Whip cream cheese and caster sugar until light and fluffy.
  • Step 5
    In a different bowl whip evaporated milk well.
  • Step 6
    Dissolve jellies in boiling water and add jelly to cream cheese and whip.
  • Step 7
    Add evaporated milk, lemon, vanilla and passionfruit and whip.
  • Step 8
    Pour over biscuit base and set in fridge,
  • Step 9
    Decorate with cream and fruit of choice.
