Light and delicious.
Ingredients
- 500g biscuits
- 185g butter melted
- 170g lemon jelly
- 2 tsp lemon essence
- 1 tsp vanilla essence
- 375ml evaporated milk chilled
- 250g cream cheese
- 4 passionfruit
- 3/4 cup caster sugar
- 3/4 cup boiling water
Method

Step 1Process biscuits to fine crumbs.

Step 2Mix together biscuit crumbs and melted butter or margarine and press into a lined spring form cake tin.

Step 3Place into fridge to set.

Step 4Whip cream cheese and caster sugar until light and fluffy.

Step 5In a different bowl whip evaporated milk well.

Step 6Dissolve jellies in boiling water and add jelly to cream cheese and whip.

Step 7Add evaporated milk, lemon, vanilla and passionfruit and whip.

Step 8Pour over biscuit base and set in fridge,

Step 9Decorate with cream and fruit of choice.
