Crunchy rich biscuits, which last a very short time when I bake them.
Ingredients
- 180g butter
- 170g caster sugar
- 230g self-raising flour
- 3/4 cup peanuts
- 3/4 cup coconut toasted
- 4 tsp smooth apricot jam thin
Method

Step 1Place butter and sugar in bowl and melt over hot water.

Step 2Add flour.

Step 3Add peanuts, coconut and jam and mix well.

Step 4Drop teaspoonfuls on baking tray.

Step 5Bake in a 180C oven for 15 - 20 minutes or until golden.

Step 6Store in airtight container when cold.
Recipe Notes
An alternative to nuts is chopped preserved ginger (uncrystallised) which is also delicious. These biscuits turn out much nicer if butter not margarine is used.
