Ingredients

  • 180g butter
  • 170g caster sugar
  • 230g self-raising flour
  • 3/4 cup peanuts
  • 3/4 cup coconut toasted
  • 4 tsp smooth apricot jam thin

Method

  • Step 1
    Place butter and sugar in bowl and melt over hot water.
  • Step 2
    Add flour.
  • Step 3
    Add peanuts, coconut and jam and mix well.
  • Step 4
    Drop teaspoonfuls on baking tray.
  • Step 5
    Bake in a 180C oven for 15 - 20 minutes or until golden.
  • Step 6
    Store in airtight container when cold.
Recipe Notes

An alternative to nuts is chopped preserved ginger (uncrystallised) which is also delicious. These biscuits turn out much nicer if butter not margarine is used.
