A quick, simple dish with a nice subtle flavour. This isn't full of amazing flavours, but it is quite nice as the rice and vegetables will have a nice sweet lime and chicken taste to it. Ideal if you don't like spicy food.
Ingredients
- 2 chicken breasts skinless
- 1 cup rice
- 2 cups water
- 1 lime
- 1 handful fresh coriander
- 1 tbs dried mixed herbs
- 2 cups mixed vegetables
- 1 tsp chilli flakes *optional
Method

Step 1Rub coriander, herbs and chilli on top side of chicken, then place some slices of lime on each fillet.

Step 2Place bowl with rice and water onto bottom rack of steamer.

Step 3Place vegetables in middle rack of steamer.

Step 4Place chicken on top rack of steamer, and drizzle with leftover lime juice.

Step 5Cook until chicken is cooked through.
Equipment
- 1 2-tiered steamer
Recipe Notes
Directions are for an electric benchtop steamer, but I'm sure it would work the same in a rice cooker, or stove top pot with steaming attachment.
You can use lemon instead of lime, and if you don't have any fresh coriander just use the equivalent of dried coriander.
