A favourite for breakfast in our house.
Ingredients
- 1 tbs oil
- 2 red onions chopped
- 1 red chilli deseeded finely chopped
- 1 tbs parsley finely chopped
- 1 garlic clove crushed
- 2 x 200 g cherry tomatoes whole
- 1 tbs sugar
- 5 eggs
Method

Step 1Heat oil in a large fry-pan and cook onion, chilli and garlic until onion softens.

Step 2Stir in tomatoes and sugar, and leave to simmer for 10 minutes.

Step 3Crack eggs into the mixture and stir lightly. Cover and cook for 6 minutes.

Step 4Sprinkle with parsley and serve with hot buttered toast.
