Ingredients

  • 1 tbs oil
  • 2 red onions chopped
  • 1 red chilli deseeded finely chopped
  • 1 tbs parsley finely chopped
  • 1 garlic clove crushed
  • 2 x 200 g cherry tomatoes whole
  • 1 tbs sugar
  • 5 eggs

Method

  • Step 1
    Heat oil in a large fry-pan and cook onion, chilli and garlic until onion softens.
  • Step 2
    Stir in tomatoes and sugar, and leave to simmer for 10 minutes.
  • Step 3
    Crack eggs into the mixture and stir lightly. Cover and cook for 6 minutes.
  • Step 4
    Sprinkle with parsley and serve with hot buttered toast.

Equipment

  • 1 frying pan
Recipe Notes
Use cherry tomatoes, whole or halved.
