A nice accompaniment with Greek and Indian dishes.
Ingredients
- 275 g basmati rice
- 3 tbs vegetable oil
- 1/2 baby onion finely chopped
- 1 tsp cumin seeds
- 6 cloves garlic clove
- 1 cinnamon stick
- 6 (pods) cardamom
- 1 bay leaf
- 1/2 tsp salt
- 600 ml water
Method

Step 1Sift through rice and remove any grit. Wash rice in a sieve under running cold water until the water runs clear.

Step 2Leave to soak for half an hour in a bowl of cold water. Drain the soaked rice and leave in a sieve.

Step 3Put water on to boil.

Step 4Meanwhile, heat the oil in a heavy based saucepan. Add the onion and cook over a gentle heat until softened and just beginning to brown.

Step 5Add all spices, except the salt, to the pan and fry for one minute. Add drained rice and salt and gently stir well to coat the rice in oil.

Step 6Transfer the rice mixture into a saucepan and add boiling water. Stir once and cover.

Step 7Cook over a gentle heat for 10-12 minutes, by which time the rice should have fluffed up and all the water should have been absorbed.

Step 8Remove the cinnamon and bay leaf.

Step 9Transfer to serving dish and gently separate rice with a fork before serving.
