Slow Cooker Gingered Pork Roast

Ingredients

  • 1 1/2 kg pork loin trimmed
  • 1 pinch salt and pepper *to taste
  • 3 Granny Smith apples peeled cored quartered
  • 1 tbs brown sugar
  • 2 tsp ground ginger
  • 1 tsp salt
  • 1 tbs cornflour
  • 1 tbs water

Method

  • Step 1
    Tie pork with kitchen string. Rub pork rind with salt and pepper.
  • Step 2
    Arrange apples in the base of a slow cooker. Place pork on top of apples.
  • Step 3
    Combine brown sugar, ginger and salt. Spoon over top surface of pork. Cover and cook on low for 7 hours.

    Ten minutes before serving, strain off 1 cup of liquid into a small saucepan. Blend cornflour with water to make a smooth paste and stir into liquid. Heat until thickened.
  • Step 5
    Remove string from pork and carve.
  • Step 6
    Serve with sauce, accompanied by the apples and fresh steamed vegetables.

How do you know when pork in the slow cooker is cooked through?

This pork should definitely be cooked after 7 hours in the slow cooker on low. However, if you'd like to check your pork loin, simply test it with a fork. If the fork pierces the pork easily, that means the pork is cooked. If you're using another cut of pork on the bone like leg or shoulder, the meat should pull away easily from the bone.

Do you need to put water in the slow cooker with the pork?

You don't need to put water or any other liquid in the slow cooker with pork loin. As it cooks, the apples in the base of the cooker will start to break down and create liquid. Also, if the meat still has a little fat on it, the fat will naturally baste the meat as it cooks. The result should be lovely and tender.
