Ingredients

  • 1 1/4 cup self-raising flour
  • 1/4 tsp bicarbonate of soda
  • 90 g butter
  • 1/2 cup caster sugar
  • 2 large egg beaten
  • 1 banana large mashed
  • 8 tsp golden syrup
  • 1/4 cup choc bits

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Grease 12 muffin tin with butter.
  • Step 3
    Sift the flour and bicarbonate soda into a mixing bowl.
  • Step 4
    Rub in the butter until it resembles breadcrumbs. Stir in the sugar.
  • Step 5
    In separate mixing bowl, beat together the eggs, bananas and golden syrup. and stir into the flour mixture until smooth. Fold in the choc bits and spoon mixture into the tins.
  • Step 6
    Bake for 25 minutes, or until firm and skewer comes out clean.
  • Step 7
    Leave to cool in tin for about 3 minutes before turning out.

Equipment

  • 1 12-hole muffin pan
Recipe Notes
If freezing, thaw at room temperature for about 2 hours before you use them.
