Sometimes a bit of visual razzle dazzle goes a long way toward enticing children's taste buds. This colourful vegie pizza is a great lunch box solution, or an easy weeknight dinner.
Ingredients
- 1 pizza base
- 1/4 cup passata
- 1 can corn kernels drained rinsed
- 1/2 punnet cherry tomatoes halved
- 1/2 red capsicum diced
- 1/2 green capsicum diced
- 1/4 red onion diced
- 1 cup mozzarella grated
Method

Step 1Preheat the oven to 220C and spray a round pizza tray with olive oil.

Step 2Put the pizza base onto the oiled pizza tray and spread with passata, leaving a 1cm border around the edge of the base.

Step 3Create concentric circles of colour on your pizza starting with the red capsicum. Once you have created an outer edge of red, start on an orange band of colour, using whatever orange vegetable you have prepared (orange cherry tomatoes in our case.) Follow that with the corn kernels, then green capsicum and finally finish in the centre with red onion, face down so that it appears purple.

Step 4Bake in a hot oven for 10-15 minutes until the cheese has melted and the edges of the pizza base are starting to brown.

Step 5Cut into wedges and serve immediately, or save for a lunch box the next day.
Recipe Notes
You can use whatever vegies your kids will tolerate on this pizza: broccoli, yellow capsicum and mushrooms also work well.
You can also make your own pizza base if you're feeling ambitious.
Top with tasty or mozzarella cheese, whatever you have handy is fine. The only rule with rainbow pizza is there are no rules.
