Ingredients

  • 2 tbs butter
  • 3 spring onions chopped
  • 2 garlic cloves crushed
  • 1 1/2 cups arborio rice
  • 1.5L chicken stock (liquid) warmed
  • 1/4 cup sour cream optional
  • 1/2 lemon juiced
  • 12 prawns deveined shelled
  • 3/4 cup parmesan cheese grated
  • 1/2 cup parsley chopped
  • 1 pinch seasoning *to taste

Method

  • Step 1
    Melt butter over slow heat and cook onion and garlic for 2 minutes.
    Prawn Risotto
  • Step 2
    Add rice and stir until coated with butter.
  • Step 3
    Increase heat to medium and add stock about a cup at a time, stirring until absorbed, adding more until rice is cooked.
  • Step 4
    Reduce heat and add sour cream and lemon juice.
  • Step 5
    Stir in prawns, parmesan, parsley and salt and pepper to taste.
  • Step 6
    Remove from heat and allow to sit for 2 minutes before serving. Serve with shaved parmesan.
Recipe Notes

I have also added in some smoked salmon slices, cut into strips and some cubed avocado at the time I add prawns.
