So quick and very impressive.
Ingredients
- 2 tbs butter
- 3 spring onions chopped
- 2 garlic cloves crushed
- 1 1/2 cups arborio rice
- 1.5L chicken stock (liquid) warmed
- 1/4 cup sour cream optional
- 1/2 lemon juiced
- 12 prawns deveined shelled
- 3/4 cup parmesan cheese grated
- 1/2 cup parsley chopped
- 1 pinch seasoning *to taste
Method

Step 1Melt butter over slow heat and cook onion and garlic for 2 minutes.

Step 2Add rice and stir until coated with butter.

Step 3Increase heat to medium and add stock about a cup at a time, stirring until absorbed, adding more until rice is cooked.

Step 4Reduce heat and add sour cream and lemon juice.

Step 5Stir in prawns, parmesan, parsley and salt and pepper to taste.

Step 6Remove from heat and allow to sit for 2 minutes before serving. Serve with shaved parmesan.
Recipe Notes
I have also added in some smoked salmon slices, cut into strips and some cubed avocado at the time I add prawns.
