Chat potatoes with a mint and garlic green pea mayonnaise. This is a Women's Weekly recipe I have been using for years. A nice change to your normal potato salad.
Ingredients
- 1 kg chat potato
- 1 cup frozen peas
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 garlic clove crushed
- 2 tbs mint chopped
- 2 tbs chives chopped
Method

Step 1Cook potatoes until just tender. Drain, rinse and refrigerate until cold.

Step 2Cook peas, drain and allow to cool.

Step 3Puree peas with remainder of ingredients until smooth. Spoon over potatoes. Chill until needed or serve immediately.
Recipe Notes
The green pea mayonnaise is also good used as a sauce with fish or chicken.
