The best fruit cake in the world. My dear mum who has serious Alzheimer's disease used to make this and I thought we had lost it forever. Fortunately my eldest sister came across it written on a piece of paper inside a book. - Dave Moore

Ingredients

  • 680 g mixed fruit
  • 225 g butter
  • 680 g sugar
  • 6 eggs beaten
  • 60 g almonds chopped
  • 60 g cherries halved
  • 1 tsp vanilla essence
  • 2 tsp mixed spice
  • 450 g self-raising flour
  • 570 ml water

Method

  • Step 1
    Place butter, mixed fruit, sugar, spices, vanilla essence, water, cherries and almonds in pan and simmer for 20 minutes. Allow mixture to cool.
  • Step 2
    Add eggs and flour.
  • Step 3
    Bake at 180C for 30 minutes, then reduce temperature to 170C and bake for 1½ hours.
Recipe Notes

You can mix or change the sugar to suit your taste.

Soft brown, muscavado or dark brown sugar may be used. I used mixed fruit, with peel, dates and apricots.
