A tasty and simple recipe that's sure to be a winner with the whole family.
Ingredients
- 1 tbs olive oil
- 1 brown onion diced medium
- 2 garlic cloves crushed
- 820g canned diced tomatoes
- 850g beef mince
- 2 tbs basil chopped
- 2 tbs oregano chopped
- 2/3 cup parmesan finely grated
- 200g fetta
- 160g bocconcini coarsely chopped
Method

Step 1Preheat oven to 220C or 200C fan-forced. Lightly grease a 2 litre ovenproof dish.

Step 2Heat oil in a large saucepan over moderately high heat. Add onion and garlic, and cook and stir for 5 minutes, or until onion softens.

Step 3Add tomatoes. Reduce heat and simmer, uncovered for 8-10 minutes, or until sauce thickens slightly.

Step 4Meanwhile, place mince, basil, oregano and half the parmesan in a large bowl.

Step 5Using clean hands, mix well to combine. Divide into 18 portions. Cut fetta into 18 equal pieces.

Step 6For each meatball, flatten a mince portion slightly and top with a piece of fetta.

Step 7Shape mince around cheese to enclose and form a ball. Place in prepared pan.

Step 8Pour tomato mixture over meatballs, then sprinkle with bocconcini.

Step 9Bake for 20-25 minutes, or until cheese melts and meatballs are cooked. Serve with mashed potato and green beans if desired.
Recipe Notes
I used diced tomatoes with roasted capsicum.
Herbs aren't essential, but they do add awesome flavour.
