Ingredients

  • 50 g butter
  • 110 g raw sugar
  • 60 ml honey
  • 200 g pepitas
  • 1 Weet-Bix crushed
  • 90 g sultanas
  • 50 g rolled oats
  • 75 g self-raising flour

Method

  • Step 1
    Preheat oven to 170C. Line a square 20 cm tin with baking paper.
  • Step 2
    Place butter, sugar and honey in a saucepan on medium low heat. Cook, stirring for 2-3 minutes or until mixture is smooth and the sugar has dissolved. Set aside to cool slightly.
  • Step 3
    Combine the pepitas, weetbix, sultanas, oats and flour in a large bowl.
  • Step 4
    Add the butter mixture and stir until combined.
  • Step 5
    Spoon the mixture into the lined pan and use a wet hand to squash the mixture down.
  • Step 6
    Bake in oven for 25 minutes or until golden.
  • Step 7
    Set aside for 30 minutes to cool completely and cut into slices.
