Quick and easy to prepare, and it's moist and delicious. Cooks in 8 minutes!
Ingredients
- 1 cup wholemeal self-raising flour
- 3/4 cup brown sugar firmly packed
- 2 tsp ground cinnamon
- 2 cups carrot finely grated
- 1/2 cup oil
- 2 eggs
Frosting
- 125 g cream cheese
- 60 g butter
- 2 cups icing sugar sifted
- 2 tsp vanilla extract
Method

Step 1Combine flour, sugar, cinnamon and carrot in a bowl, stir in combined oil and eggs. Spray a 20 cm microwave ring cake pan with cooking oil spray, pour in cake mix.

Step 2Cook in microwave on medium high for approximately 8 minutes, or until just cooked (cake starts to come away from sides of pan).

Step 3Stand 5 minutes, turn onto wire rack to cool.

Step 4Frosting: Beat cream cheese and butter until smooth. Gradually beat in icing sugar and vanilla extract.

Step 5Top cake with frosting.
Equipment
- 1 20cm round cake pan
Recipe Notes
½ cup raisins, sultanas or walnuts can be added to cake mix, if desired.
Frosting can be topped with ⅓ cup of chopped walnuts, if desired.
Lemon juice can substitute vanilla extract.
