Ingredients

  • 1 cup wholemeal self-raising flour
  • 3/4 cup brown sugar firmly packed
  • 2 tsp ground cinnamon
  • 2 cups carrot finely grated
  • 1/2 cup oil
  • 2 eggs

Frosting

  • 125 g cream cheese
  • 60 g butter
  • 2 cups icing sugar sifted
  • 2 tsp vanilla extract

Method

  • Step 1
    Combine flour, sugar, cinnamon and carrot in a bowl, stir in combined oil and eggs. Spray a 20 cm microwave ring cake pan with cooking oil spray, pour in cake mix.

    Cook in microwave on medium high for approximately 8 minutes, or until just cooked (cake starts to come away from sides of pan).
  • Step 3
    Stand 5 minutes, turn onto wire rack to cool.
  • Step 4
    Frosting: Beat cream cheese and butter until smooth. Gradually beat in icing sugar and vanilla extract.
  • Step 5
    Top cake with frosting.

Equipment

  • 1 20cm round cake pan
Recipe Notes

½ cup raisins, sultanas or walnuts can be added to cake mix, if desired.

Frosting can be topped with ⅓ cup of chopped walnuts, if desired.

Lemon juice can substitute vanilla extract.
