A very light and crispy batter that's so easy and works a treat. Great for children who are allergic to eggs as this has no egg in it - Karmagirl

Ingredients

  • 3 tbs self-raising flour
  • 2 tbs sparkling water cold
  • 1 pinch salt
  • 1 pinch chilli powder optional
  • 1 tbs sunflower oil
  • 2 flathead fillet

Method

  • Step 1
    Sift flour into a small bowl. Add a pinch of salt and chilli powder if using.

    Add soda water gradually, whisking to create a batter the texture of thickened, not whipped cream. If the mixture is too runny add a little extra flour.
  • Step 3
    Heat frypan. Dry flathead tails or similar on paper towel, dip in batter and add to heated fresh vegetable or sunflower oil in a fry pan.
  • Step 4
    Turn when lightly browned one side. Drain on paper towels, sprinkle with sea salt and serve immediately.
