A very light and crispy batter that's so easy and works a treat. Great for children who are allergic to eggs as this has no egg in it
Ingredients
- 3 tbs self-raising flour
- 2 tbs sparkling water cold
- 1 pinch salt
- 1 pinch chilli powder optional
- 1 tbs sunflower oil
- 2 flathead fillet
Method

Step 1Sift flour into a small bowl. Add a pinch of salt and chilli powder if using.

Step 2Add soda water gradually, whisking to create a batter the texture of thickened, not whipped cream. If the mixture is too runny add a little extra flour.

Step 3Heat frypan. Dry flathead tails or similar on paper towel, dip in batter and add to heated fresh vegetable or sunflower oil in a fry pan.

Step 4Turn when lightly browned one side. Drain on paper towels, sprinkle with sea salt and serve immediately.
