Ingredients

  • 3 kg kiwifruit pulp removed
  • 1 1/2 lemon juiced
  • 12 cup white sugar
  • 2 cup water
  • 1 tbs butter

Method

  • Step 1
    Place kiwi fruit pulp in a large, heavy based saucepan, add the water. Add butter.
  • Step 2
    Bring to the boil and simmer until the fruit is soft, approximately 10 minutes.
  • Step 3
    Add sugar and lemon juice, boil briskly for 5-10 minutes or until the jam sets when tested.
  • Step 4
    Pour into hot, sterilised jars.
Recipe Notes
This quantity of fruit makes about 8 jars of jam. I freeze all the jam I make with the lids on and take out when required and it is like fresh jam.
