A fairly easy dinner, though a little bit of preparing involved.
Ingredients
- 4 chicken thigh or breast fillets
- 3 middle bacon rashers, fat trimmed and sliced
- 250 mL cream
- 3-4 tablespoons cream cheese
- 1 chilli, or to taste, finely chopped
- 2 onions, diced
- 3 cloves garlic, crushed and diced
- 500 g mushrooms, sliced
- Baby spinach, to taste
- 2 avocados, rough chopped
- 4-5 tablespoon fresh parsley, chopped
- Dry Italian herbs
- 1 1/2 x 250 g packet fettuccine
Method

Step 1Trim chicken of any fat. Toss in oil, salt, pepper and dry herbs.

Step 2Grill until just under cooked. Rest on paper towel until cool. Slice.

Step 3Cook pasta in very large saucepan until al dente.

Step 4Fry bacon, onion, chili, garlic, mushrooms Italian herbs in a deep pan.

Step 5Mix in cream, cream cheese and chopped parsley until a sauce consistency.

Step 6Mix in spinach and avocado.

Step 7Drain pasta, keeping a little liquid in saucepan. Return pasta and stir in sauce.

Step 8Serve with Parmesan and crunchy crusty bread.
