Ingredients

  • 1 1/2 kg beef ribs
  • 1 tsp oil
  • 1/2 cup spring onion thinly sliced
  • 4 garlic clove crushed
  • 1/2 cup tomato sauce
  • 1/2 cup apple cider vinegar
  • 1/4 cup treacle
  • 1/4 cup smooth peanut butter
  • 1/4 cup soy sauce
  • 4 tsp sweet chilli sauce

Method

  • Step 1
    In a large pan combine ribs with enough cold water to cover. Bring to the boil over a medium heat. Cover.
  • Step 2
    Remove from heat and let stand for 30 minutes and drain ribs.
  • Step 3
    Heat oil in a saucepan over a medium heat.
  • Step 4
    Add spring onions and gently saute until soft. Add garlic and cook stirring for 1 minute.
  • Step 5
    Stir in tomato sauce, vinegar, treacle, peanut butter, soy and chili sauce. Cook until for about 10 minutes or until sauce slightly thickens.
  • Step 6
    Remove from heat and reserve one cup of sauce.
  • Step 7
    Preheat oven to 190C.
  • Step 8
    Line a shallow baking dish with foil, brush ribs both sides with sauce and place on foil.
  • Step 9
    Cover with foil and bake for about 1 hour, turn and brush ribs with more sauce every 20 minutes until tender and cooked through.
  • Step 10
    Place ribs on serving platter.
  • Step 11
    Serve with reheated reserved sauce.
