Get your party started (with or without an actual party!) with these sweet old-school honey joys. This recipe comes straight from the recipe on the Kellogg’s Corn Flakes packet – just four ingredients makes smiles all round and crunch for days. Enjoy!

How to make honey joys: key tips

The butter, sugar and honey are stirred together in a saucepan over medium-low heat until the sugar and honey are melted and well combined with the butter. It will froth up in the pan, but this is normal. The mixture works like a sweet sticky glue that, when poured into a bowl of corn flakes, makes all the flakes stick together.

At this point, work quickly to evenly divide the warm mixture among the paper cases – the butter in the mixture will quickly harden (especially in cool weather), making the mixture more difficult to spoon. Bake the honey joys and then let them cool before you tuck into them. They’ll be super hot when straight out of the oven and they’ll get a lot crunchier as they cool.

What’s in these honey joys?

It only takes four ingredients to make this delightfully delicious treat: butter, caster sugar, honey and Corn Flakes. If you like, you can add extra crunch in the form of finely chopped macadamias to the mixture, toss through coloured sprinkles to boost the party atmosphere, or drizzle melted chocolate over the tops of cooked and cooled honey joys. You can also try using Crunchy Nut Corn Flakes in place of regular Corn Flakes.

Ingredients

  • 90g butter
  • 1/3 cup sugar
  • 1 tbs honey
  • 4 cups Kellogg's Corn Flakes

Method

  • Step 1
    Preheat oven to 150C.
  • Step 2
    Line 24-hole patty pan with paper cases.
  • Step 3
    Melt butter, sugar and honey together in a saucepan until frothy.

    Add corn flakes and mix well.
  • Step 5
    Working quickly, spoon mixture into patty cases.
  • Step 6
    Bake for 10 minutes.

    Cool.

History of Honey joy biscuits

Kellogg’s started producing corn flakes in Australia in 1924, advertising them as a healthy breakfast for kids and adults alike. We don’t know who and when someone thought of turning them into these gorgeous, sweet treats, all we know is a recipe was published in a newspaper in 1938 and we are still enjoying them more than 80 years later. 

Why are my honey joys crumbly?

Okay, be honest, did you try to eat one before they were properly cooled? They’re quite soft and fragile when they first come out of the oven and are likely to crumble if eaten at once. Even after a bit of cooling they’ll seem to be firm but will still be sticky. You really need to let them cool for a good couple of hours to be perfectly crisp and crunchy. 

What are patty pans?

This recipe says to line patty pans with paper cases. Patty pans are shallow with a rounded base. It doesn’t matter if you use the slightly bigger muffin pans as it’s the paper cases that form the shape of the honey joy, with the pans just acting as a vessel to hold them.

How long do honey joys last?

While, like most sweet treats, they’re pretty much gone in a flash. If you do have the time to do a double batch you can store them in an airtight container in the fridge for up to a week. For ultimate crunch, however, eat them the day of or the day after cooking.
