Guinness-Glazed Ham

Ingredients

  • 6 kg ham leg
  • 750 ml Guinness
  • 8 whole cloves optional

Glaze

  • 1 cup brown sugar
  • 2 tsp mustard powder
  • 2 tsp ground cardamom
  • 2 tsp ground ginger
  • 1/4 tsp ground cinnamon optional

Method

  • Step 1
    Preheat oven or barbeque to 160C.
  • Step 2
    Cut the skin around the knuckle of the ham without cutting into the fat or flesh.
  • Step 3
    Ease the skin from the fat by slipping your thumb up under the skin and firmly sliding it back and forth.
  • Step 4
    Ease the whole skin off, which should come off in one piece.
  • Step 5
    Place the ham fat side up into a pan with the Guinness, reserving 2-3 tablespoons for the glaze.
  • Step 6
    Cover with foil pressing the edges right down to make it as airtight as possible.
  • Step 7
    Bake for 1½ hours. Lift the foil and baste the ham with the juices 3 or 4 times during cooking.
  • Step 8
    Glaze: Combine sugar, mustard, spices and enough stout to make a thick paste in a bowl and stir well.
  • Step 9
    Remove ham from oven, lift the foil off and pour off the liquid into a saucepan.
  • Step 10
    Using a sharp knife, score the fat with 4 cm interval diagonal cuts, first one way then the other to form a diamond pattern.
  • Step 11
    Spread the glaze over the ham and stud each diamond cut with cloves.
  • Step 12
    Increase oven temperature to 200C and bake a further 30-40 minutes, basting every 10 minutes with the glaze.
  • Step 13
    If serving hot, leave the ham in the turned off oven for 30 minutes.
  • Step 14
    If serving cold, cool and put into refrigerator over night. Serve thinly sliced, although the hot ham you can cut off in chunks or thinly slice.
Recipe Notes

I have cooked this in my barbeque for Christmas dinner and it came out perfectly. This is a good recipe for the barbeque too. Easy to cook, although does take a little patience, but the end result is a wonderful glazed ham. You can serve it on a platter with a garnish of watercress or parsley.
