A delicious low-fat vegetable frittata for those on a diet.
Ingredients
- 1 cooking oil spray
- 1 potato cooked diced peeled
- 1 cup sweet potato cooked cubed
- 1/2 red capsicum diced
- 1 zucchini thinly sliced
- 2 shallots chopped
- 3 egg
- 3/4 cup light milk
- 2 tbs plain flour
- 1/2 cup low-fat tasty cheese grated
- 2 tbs fresh dill chopped
Method

Step 1Preheat oven to 180C. Lightly grease a 23 cm pie dish.

Step 2Arrange the vegetables over base.

Step 3Combine eggs, milk, flour, cheese and dill in a bowl.

Step 4Pour over vegetables. Bake for 40 minutes or until just set.

Step 5Serve either hot or cold with salad.
Recipe Notes
I used butternut pumpkin instead of sweet potato and I also used mixed herbs instead of the dill.
