Ingredients

  • 1 cup cornflour
  • 3/4 cup sugar
  • 2 tsp plain flour
  • 1 tsp cream of tartar
  • 1/2 tsp bicarbonate of soda
  • 4 eggs large separated
  • 1 pinch salt

Method

  • Step 1
    Sift cornflour, plain flour, cream of tartar and bicarbonate of soda three times.
  • Step 2
    Beat egg whites and salt until stiff. Gradually add sugar and beat until quite stiff.

    Add egg yolks and beat until thick.
  • Step 4
    Fold in the flour mixture.
  • Step 5
    Pour mixture evenly into two greased and lined round pans.
  • Step 6
    Bake for 20-30 minutes at 180C.
