A light and fluffy cake that is often served filled with jam and cream.
Ingredients
- 1 cup cornflour
- 3/4 cup sugar
- 2 tsp plain flour
- 1 tsp cream of tartar
- 1/2 tsp bicarbonate of soda
- 4 eggs large separated
- 1 pinch salt
Method

Step 1Sift cornflour, plain flour, cream of tartar and bicarbonate of soda three times.

Step 2Beat egg whites and salt until stiff. Gradually add sugar and beat until quite stiff.

Step 3Add egg yolks and beat until thick.

Step 4Fold in the flour mixture.

Step 5Pour mixture evenly into two greased and lined round pans.

Step 6Bake for 20-30 minutes at 180C.
