Ingredients

  • 1 tbs vegetable oil
  • 1 onion sliced
  • 1 red capsicum chopped seeded
  • 1 garlic clove crushed
  • 1 red chilli chopped seeds removed small
  • 2 tsp curry powder
  • 400 ml coconut milk
  • 4 white fish fillet firm
  • 4 green onion chopped
  • 1 pinch salt *to taste
  • 2 cup rice steamed *to serve
  • 1 tsp coriander *to serve

Method

  • Step 1
    Heat oil in a large frying pan on medium. Saute onion, capsicum, garlic and chilli for 2 -€“ 3 minutes.
  • Step 2
    Add curry powder and cook, stirring for 1 minute. Blend in coconut milk and bring to the boil.
  • Step 3
    Reduce heat to low and simmer for 5 - 10 minutes, until reduced and slightly thickened.
  • Step 4
    Add fish, salt and green onion to curry. Simmer for 8 -€“ 10 minutes or until fish flakes easily when tested with a fork.
  • Step 5
    Season to taste and served with steamed rice and roti bread.
