Delicious, quick and easy curry.
Ingredients
- 1 tbs vegetable oil
- 1 onion sliced
- 1 red capsicum chopped seeded
- 1 garlic clove crushed
- 1 red chilli chopped seeds removed small
- 2 tsp curry powder
- 400 ml coconut milk
- 4 white fish fillet firm
- 4 green onion chopped
- 1 pinch salt *to taste
- 2 cup rice steamed *to serve
- 1 tsp coriander *to serve
Method

Step 1Heat oil in a large frying pan on medium. Saute onion, capsicum, garlic and chilli for 2 - 3 minutes.

Step 2Add curry powder and cook, stirring for 1 minute. Blend in coconut milk and bring to the boil.

Step 3Reduce heat to low and simmer for 5 - 10 minutes, until reduced and slightly thickened.

Step 4Add fish, salt and green onion to curry. Simmer for 8 - 10 minutes or until fish flakes easily when tested with a fork.

Step 5Season to taste and served with steamed rice and roti bread.
